Roy Henley - Managing Director 5 Mile
With over 25 years of international experience in hospitality management, brand development, and event operations, Roy Henley has led some of the most dynamic venues across Ireland, New York, and the Dominican Republic. Roy spent 21 years in New York City, where he founded and managed The Grange Bar & Eatery and Bierstrasse Beer Garden, two acclaimed venues celebrated for their community spirit, quality, and atmosphere. His leadership and eye for detail helped establish both as neighbourhood landmarks, known for great food, exceptional service, and memorable guest experiences. He later spent five years in the Dominican Republic, where he founded Canabespoke Cocktail Events and CasaRemedio Cocktail Bar, delivering high-end cocktail experiences and luxury events for private clients and global brands.
Now based in Ireland, Roy continues to build on a career defined by creativity, collaboration, and a genuine passion for people, service, and hospitality done right.
Sophie Wright - Key Account Manager 5 Mile
With almost a decade of experience in the hospitality industry and five years in marketing and sales, Sophie has built a career defined by strategic thinking, strong communication, and a commitment to delivering results that drive organisations forward. Sophie’s experience spans both front-of-house leadership and behind-the-scenes strategic roles, from heading up the Reservations Department at The Imperial Hotel Cork to leading marketing and business development within a professional services firm. At The Fork & Wheel, Sophie brings together her love of hospitality and her experience in sales and marketing in her role as Key Account Manager. Having been with the business from the very beginning, she has played a central role in shaping its sales strategy, marketing presence, and reservations operations. You’ll often spot Sophie on our social channels sharing everything new and exciting at The Fork & Wheel or onsite, ensuring private functions run flawlessly.

Vasil Baci - Head Chef
With over 17 years of experience leading kitchens at some of Cork’s top restaurants, including the Imperial and Metropole Hotels, Vasil is bringing his expertise and passion for local, seasonal ingredients to our new restaurant in Midleton. A graduate of Culinary Arts from MTU, his creativity and commitment to high-quality dishes are sure to impress.
